All that’s left of the vegan pumpkin bread I brought to my grandma’s birthday! I love when non-vegans enjoy vegan foods without knowing it :)
1 3/4 cup flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/2 cup dark chocolate chips
1/2 cup brown sugar
1/4 cup pure maple syrup
1 can puréed pumpkin
1 tsp vanilla
2 tsp vegetable oil
*Mix wet ingredients and cut into dry ingredients
*Cook in a well oiled slow-cooker for 2 hrs on high
I went to the farmers market this morning and bought (among many other things) some fun heirloom carrots and tomatoes. Then I finished the afternoon off with lots of brambly trails with the pup. It was a beautiful Sunday!
I’ve got two vegan cookbooks on the way from Amazon - can’t wait to try out some interesting new recipes!
Went on a run tonight for the first time in quite a while (I’ve been busy!) and it felt great actually. I’m going to try and go again tomorrow either before or after work.
My new recipe this week was Seared Turkey and White Bean Burgers. I’m trying to get better at cooking meat for my boyfriend’s sake. I can’t say I’m succeeding (a lifetime of cooking basically only vegetables isn’t the best experience) but A for effort!
3 trail miles this early afternoon. It was beautiful weather, the birds were out, and the air smelled fresh and earthy. I absolutely love this trail. It used to be one of my favorite places to explore when I was growing up, and I think I’ll be spending a lot more time here now that I’ve rediscovered it.
Afterward I went out to dinner at an African restaurant with my family. I’m not sure of the name of the dish I had, but I think it was coconut curried kidney beans, rice, and a fresh cucumber and tomato salad. It was delicious, I absolutely love African food!
